Hells Kitchen!?! What An Opportunity! Says Kevin McCourt, Executive Chef

Kevin McCourt, executive chef at The Clarion Hotel Carrickfergus, formerly known as The Quality Hotel Carrickfergus, has just completed a two-week “stage” in Gordon Ramsay’s kitchen at Claridge’s.

Working in one of the most famous kitchen’s in the world, Kevin achieved the near impossible. Chefs from all over Europe and beyond, put themselves forward for a chance to work with Gordon, but are often disappointed. However, 35-year-old Kevin, who is married with two daughters, took it upon himself to apply and was elated when an email came back from Ramsay’s office offering him a two-week placement in the prestigious kitchen of Gordon Ramsay at Claridge’s.

Working alongside a brigade of 20 chefs, Kevin obtained a valuable insight into the world of “top class” cuisine and the creation of such a prestigious and renowned menu. During Kevin’s stage he worked within each and every section of the kitchen and was  lucky enough to land a day’s work experience at Ramsay’s Michelin 3 star restaurant – Royal Hospital Road, Chelsea.

Back in Belfast, Kevin who presides over The Red Pepper Restaurant, prides himself on cooking with locally produced ingredients, and is well-known for his stylish, yet simple approach to allowing good flavours speak for themselves.  The Clarion Hotel Carrickfergus, which has just been re-branded and refurbished, has had a top-to-toe makeover.  The newly renamed Red Pepper Restaurant and Bar 75 have both received a totally new and fresh chic look and the 68 guestrooms have received brand-new soft furnishings and decorations.

Commenting, Kevin said, “I’m really appreciative to Gordon and his team. I have learnt so much in the past two weeks, and feel this has taken the level of my expertise on to new heights. I will certainly be putting into practice the many valuable things I have learnt and hope to give my guests a taste of some top-class Gordon Ramsay inspired dishes.”
